Grain-free food: potato vs grain

I was just looking over the ingredients of some of the grain-free foods and one question comes to mind: Why is it supposed to be so much better to replace grain with potato? Is it a digestability factor? An allergy factor perhaps? I do like the idea of having less carbs and more meat in a food, but you can get that in some of the foods that contain grain.

Hoping someone can fill me in.
